While we are off doing other things the Crockpot handles the work of making dinner. It's so nice to be able to plop everything in there and just forget about it for awhile. There is no need to be hovering around in the kitchen while life goes on elsewhere.

This recipe really only uses four ingredients. The fifth is the cooked rice that we'll serve it over…see, I keep making things easier and easier for you!

Grab some boneless skinless chicken breasts, teriyaki marinade, carrots, and broccoli. I use matchstick carrots and broccoli that is trimmed to florets!
You can definitely use chicken things for this (also boneless and skinless) if you prefer dark meat. That's up to you. When I'm making this teriyaki chicken in the crockpot I usually just use whichever I have on hand!

Place ¼ cup of marinade in the bottom of the slow cooker
Lay chicken on top of marinade
Pour remaining sauce over the chicken
Cook on low 4-6 hours until chicken is tender
At the last 30 minutes, add broccoli and carrots on top of chicken and continue cooking just until tender
Serve over cooked rice and enjoy!

I always like to use an 8 quart slow cooker but you can make a lot of these recipes in a 4 or 5 quart slow cooker as well.
Something handy to keep around are crockpot liners. They make cleanup a total breeze!
The same goes for a ladle and serving dishes or bowls. It's so nice to be able to throw those things in the dishwasher and not worry about them being ruined! No hand washing around here, too time consuming.
